Pav Bhaji – Rick Stein
Street food from Mumbai. (Served on buttered or unbuttered bread of your choice)
350g potatoes, scrubbed and cut into large chunks.
1 large onion, chopped
2 tsp cumin seeds
400g ripe tomatoes, chopped (or a tin of tomatoes will do)
1x 300g tin marrowfat peas, drained (I prefer to use waitrose brand as some other brands contain tartrazine)
3 tsp pau Bhaji spice blend
1 tsp chilli powder (or to taste. I use less when feeding children)
1 tsp ground coriander
1 1/2 tsp salt
Handful fresh coriander
If you can’t source Pau Bhaji spice blend, use:
2 tsp garam masala
1/4 tsp ground fennel
1/4 tsp amchur
1/2 tsp turmeric
1/4 tsp ground ginger
1. Boil potatoes in salted water until soft, drain and mash.
2. Heat butter in large heavy bottomed pan, add onion and cumin seeds, fry until soft and golden-20ish minutes. Stir in mashed potatoes, fry for 1-2 mins, add tomatoes, mix well and cook for 5 minutes, stirring often.
3. Add marrowfat peas, all spices and salt, cook for 5 mins, stirring and mashing the mixture together. Finish by stirring in chopped coriander.
4. Serve with buttered rolls or naan breads. (Lime wedges and red onion rings)
