Norfolk Cheese Scone
450g SR flour
1/2 tsp salt
1 beaten egg
Handful grated cheese.
One chopped onion sautéed in butter until soft. (Optional)
Sunflower or sesame seeds to decorate (optional)
Preheat oven to 200 c.
Grease a baking sheet.
Rub butter into flour and salt until it resembles fine breadcrumbs.
Stir milk into egg then mix into flour with a fork, then use hands to form a soft dough.
Divide into two, press or roll one piece into a 20cm circle.
Enclose grated cheese (and softened onion if using), top with other circle of dough.
Glaze and mark 8 pieces with a knife. Sprinkle with seeds and a little cheese.
Bake for 35-45mins
